Pate a Choux and chocolate Mousse ( eggless Version)


Finally we , the Baking Eggless Group have proved that we can bake anything without using eggs..For the month of  August the challenge was to make Pate a Choux and Chocolate Mousse .Guess who suggested this ??? It was me .( I know everyone would have cursed me for suggesting this recipe :( ).

What was on mind was there is nothing impossible to make . If we keep on  trying and put more effort on what we are doing nothing is impossible . Even gayathri wanted  to take this challenge to another level . So she humbly accepted my suggestion. Thank you +Gayathri Kumar  for accepting my opinion.. 

I was pretty sure the Texture of the eggless Choux will be little harder than the usual and it was harder than the usual. But along with the Chocolate Mousse was super rich and delicious . Another important thing for me was , I myself made the egg replacer  in my home kitchen :) . The Choux turned out really good .



                                   
PATE A CHOUX :                          Source : Nivedhanam

Ingredients:

APF- 1/2 Cup
Milk - 1/2 Cup
Baking Powder - 1 TSP
Butter - 2 TBLS
Sugar - 1 TSP
Salt - a pinch
Egg Replacer - 2 TBLS
Warm Water - 1/3 Cups + 2 TBLS.  ( Whip the egg replacer until stiff with warm water )

Instructions :
  • Preheat the oven at 220 C / 428F .
  • Align the baking tray with the parchment paper .
  • Seive all the dry ingredients to make sure there is no lumps .
  • Combine milk , butter and 2 TBLS water , bring it to boil.
  • Once the milk has come to the boil , reduce it to sim and add the dry ingredients little by little and keep on stirring to make sure there is no lumps formed.
  • When it starts to leave the sides of the pan remove from heat.
  • Now divide the whipped egg replacer into three potions . Add 1st potion and mix vigorously . Add the 2nd potion and mix well . Lastly add the 3rd potion and mix well till it forms a dough.
  • Note this dough will not be liquidi like the usual eclair dough .It will be little bit harder to pipe. 
  • Shape it into eclairs shape and place in the tray.
  • Bake the eclairs in a preheated oven for 25 minutes and reduce the temperature to 300F and bake it for another 10 minutes or till it is done. 
  • Cool it in a wire rack. Once it is cooled down completely  pipe with the pastry Cream / Chocolate Mousse .

 CHOCOLATE  MOUSSE.

Who doesn't like light and creamy Chocolate Mousse . This is a Instant eggless version which can be done in minutes . There is no need to setting it up in fridge . If you are a pure vegetarian , or having allergies on eggs or doesn't like raw smell of eggs this is the chocolate mousse you got to go for. I have adopted the recipe from Nigella  but i have made my own version of Mousse.



Ingredients :

Mini Marshmallows -  1 1/2 Cups
Butter - 1/4 stick of butter ( Soften)
Semi Sweet Chocolate - 125gms 
Hot boiling water -  1/8 cup + 1 TSP
Instant coffee powder - 1/2 TSP
Double cream -  5 Oz
Vanilla - 1/2 TSP

Instructions:
  • Melt the Dark chocolate along with butter , hot water , instant coffee powder in a sauce pan.
  • Once the chocolate starts to melt add the marshmallows. Keep stirring the sides. Once everything is melted keep off the heat. Allow it to cool.
  • Meanwhile whip the Double cream along with vanilla .
  • Fold the cream into the chocolate mixture . Make sure not to over fold or else you will miss the Fluffiness / lightness of the mousse.
  • Pour it into the serving bowls.

 My eclairs with Chocolate Mousse were out of the world. Though i liked them i missed the eggs in it .

  3. Your choux looks amazing. Mine was an unmitigated disaster and I had to bin it. The chocolate mousse also looks yummy and super easy to make.
