Vegetable Pie

For the month of july , the Challenge on Baking eggless group was Veg version of meat pie. It was solely suggested by Gayathri from Gayathri's cookspot . I was in a guilt that i was not able to particiate in the last months challenge , so this month i finished these cute little pies before the date.These are super crispy pies vanished in minutes.
 
 


 
 
 
The change i made was in the pie crust . I used my usual pie crust recipe .
 
Recipe for the Pie Crust :
 
All Purpose Flour - 1 Cup
Baking Powder - 1/4 TSPN
Butter - 1/2 Stick = 1/4  cup( ColdTempreture )
Salt- 1/4 TSPN
Sugar - 1 TSPN
Ice Cold Milk - 3-4 TBLSN
 
Recipe for the Filling :
 
Carrots - Chopped really small
Celery - Chpped really small
Onions Chopped Really small
Garlic - Chopped really small
Pepper
Salt
Butter - 2 TSPN
 
For the white sauce:
 
Milk
All Purpose flour
Butter
Salt
pepper
 
Instrucions:
 
To make the dough:
 
1. Mix all the dry ingredients.
2. Then mix the cold butter with  the dry ingredients.
3. Once the flour is crumbly add milk and form it in to a dough.
4. Knead it for 2 minutes , cover it with a cling wrap , Rest it for 20 - 30 minutes.
 
To Make the filling :
 
1. In a pan melt the butter , add garlic and onions , allow it to cook.
2. Once it is cooked add carrots and celery sprinkle with salt and and pepper.
3. Allow it to cook .
 
THESE 4TH AND 5TH STEP SHOULD BE DONE AFTER ARRANGING THE PIE CRUST:
 
4. Once it is cooked , make the whitesauce add the cooked vegetables and cheese .
5.Give it a good mix. Make sure the filling is semi liquid.
 
( Making the white sauce at the last minute is to avoid the white sauce from getting thick .)
 
Arranging and Assembling the Pie :
 
1. Preheat the oven @ 350F
2.Greace the muffin pan.
3. Roll out the dough  , Cut it into circle to fit  into the muffin pan .
4. Once the dough is arranged in a muffin pan , using a folk prick it at the bottom of the pie.
5. Fill the pie to its 2/3rd .
6. Cover the pie in a same procedure .
7. Using a folk ,seal the edges in the pie .
8. Bake it for 20-25 minutes.

  1. Its a lovely vegetarian version. I don't think I can make the dough, so am gonna use the ready made one to save time too.
