No Knead - Cheese Bread



Whats better ??? Store bought bread or home made ??? Yup ..Home Made Breads are always better . I love to bake my own bread loaf . For a newbie baker , these kinds of No Knead Breads are advisable . This type of bread is easy to make , less work involved and  more over they are delicious like every other bread.  But one thing you should remember before baking this bread is , this is not a instant bread . If you have planned it to bake it today . You should mix all the ingredients a day ahead and allow it to proof for 18- 24 hours. Do not worry about the dough turning to sourdough ( It doesn't actually turn to sourdough). This bread is really delicious and its so good as sides for soup.



Ingredients :

All Purpose Flour - 1 1/2 Cup + More to Knead and dusting
Warm Water - 3/4 Cup
Yeast - 1/4 TSP
Salt - 1/2 TSP
Cheese - 1/2 Cup - I used mozzarella you can use any kinds of cheese.


These kinds of no -knead breads are really easy to work with . 

Instructions:

- In a large bowl combine All Purpose Flour ,Salt and Yeast . ( Try to use a bowl which has lid on it , so it will be easy to cover the dough and leave till the next day ). 
- Pour in the warm water and mix it with a wooden spoon , make sure the flour is well combined and no lumps in the dough .
- Cover it with the lid , Leave it in the room temperature for 18- 24 hours.
- Place the dough in the flour dusted working surface . Knead it for 2 minutes .
- Fold the cheese in to the dough . Place it in the Baking tray . Cover it with the wet damp cloth .
- Allow it to raise for an hour . 
- Pre - heat the oven at 400 F. Place a small bowl with some water in the corner of the oven .**
- Bake the bread covered for 30 minutes . Uncover  and bake it for another 15 - 20 minutes at 300F. 




**Notes**

- It is a must that the dough should be on the room temperature for 18- 24 hours .
- Placing some water into the oven when baking , moisture from water , releases the steam that makes the bread / cake to have softer crust . 
- When you place the dough on the baking tray ,make sure to dust some flour and place it .

Eggless Greek Simiti / Koulouri /Sesame Crusted Bread Rolls


Simiti / koulouri is a circular bread with sesame seeds on top . They are very common in Greece and  Turkey  . Simiti's size , chewiness / crunchiness ,  texture varies in each region . They are also called as Turkish Bagel  in USA . These little cuties makes a good filling breakfast .  As soon as i took it out from the oven , i had some cream cheese applied on the middle and ate it ASAP . Homemade warm breads are the best and this was out of the world. 

The outer part of the bread was crunchy and inside chewy . The flavor and taste of  roasted sesame and along with the slight sweetness from honey was out of the world.  

Are you getting tempted . I bet ,you will never regret baking these . 



For this months challenge on Baking Eggless group , +Priya Suresh from Priyas Versatile Recipes had suggested this recipe .  Congrats +Gayathri Kumar and each and every one from the group for entering the third year of successful eggless baking .




Recipe source - My Expat Kitchen 
Ingredients :

All purpose flour - 2 Cups
Yeast - 2  TSP
Sugar - 1 1/2 TBLS
Salt - 1 TSP
Warm Milk   +/-  1 Cup
Olive oil - 1 1/2 TBLS

For topping :

Honey - 3 TBLS
Water - 1/4 Cup
Roasted Sesame Seeds -  1/2 Cup



Instructions :
  • Mix all the dry ingredients separately and mix all wet ingredients ( use only 1 TBLS ) separately . 
  • Make a well in the dry ingredients and slowly add the wet ingredients to the dry ingredients .
  • Using a dough hook mix it for  7- 10 minutes .
  • When all the ingredients are mixed well and formed a dough , place it in the counter top.
  • Oil your hands knead the dough for couple of minutes .Sprinkle some flour over it and knead really well .
  • Place the dough in a greased bowl , Cover it with cling wrap. Keep it in a warm place . Allow it to proof for an hour .
  • Meanwhile Roast the sesame seeds till they are golden in color and allow it to cool completely.
  • Punch the dough and release the air.  Divide the dough and make equal portions.
  • Divide one portion of dough into two . Roll it out to form  2 ropes. Combine the edges and twist the dough to form a braided bread . Bring the ends together ,  pinch it and seal . 
  • Place the bread in the baking tray .
  • Pre- heat the oven at 350F. 
  • Mix the honey and water , generously brush it over the bread . (  I had little honey so i brushed it , original recipe ask to dip the bread in the liquid  mixture ) .
  • Sprinkle the toasted sesame seeds over the bread .
  • And now its time to bake the simities . Bake the bread for  20 - 25 minutes till they turn golden brown.
  • Remove from oven , Allow it to cool . 
  • Serve it warm .


Notes -

  • This is my way of doing the bread . I know the yeast i use is still active . In case if you are not sure about the yeast you use ,  Replace half a cup of milk to warm water . Mix the sugar in warm water and sprinkle the yeast over it . Once the yeast mixture becomes frothy add it to the bread and proceed with the instructions .
  • Keeping the dough in a warm place is necessary . It helps the bread to proof . I kept it inside the microwave as it is so cold over here .
  • Original recipe called for grape juice . As i didn't have it i replaced it to honey .
  • Usually this breads needs to be dipped in the grape juice , I brushed it with honey as i was going out of honey .
  • This breads do not need second time proofing .

French Baguette

Baguette -  Bakers dream bread . I am pretty sure anyone who loves baking , baguettes are in the to - do list . 

I had this in my to-do list for along time . I tried making baguettes with sour dough , believe me i was ashamed to call me as a baker for some time. They turned out so bad . I really don't know where it went wrong . Then i kept postponing  it .


 Finally i made baguette for the Home bakers Challenge. The recipe was suggested by +Priya Suresh . It turned out to be fantastic .  The bread had nice golden crust . It was perfect for the Garlic Cheese toast i made that evening ( Recipe to be posted ) . 

This recipe was quite simple using yeast . The sour dough recipe i made , actually took three days to make sour dough and finally it gave me disappointment . One good thing in that was , i used only 1 Cup of flour . So i didn't lose that much of ingredients :P .


Ingredients :

All Purpose Flour - 2 Cups
Sugar - 1 TSP
Warm Water -  Approximately 3/4 cup + ( might need another 1 TBLS )
Salt - 1 TSP
Yeast - 1 TSP
                                                                         

Instructions:

  • In a bowl add sugar and yeast to the warm water and mix it well .  ( Make sure the water is warm , not hot . If its hot it will kill the yeast ).
  • Keep the yeast mixture covered . Allow it to sit for couple of minutes till it turns frothy / Bubbly ( It means the yeast is active).
  • In another bowl add flour and salt . Pour the yeast mixture and mix it initially then knead it using hands / stand mixture / beater with dough hook  for approximately 10 minutes.  
  • Once you see the gluten forming in the dough cling wrap the dough in a greased pan ,allow it to proof for an hour / till it doubles in size. ( When you stretch a piece of dough , you can see a elastic sort of a thing , that's how gluten forms  ) Check this site  .
  • Depending on the size of the bread you knead , divide the dough.
  • Dust some flour before working on the dough .( helps not to stick to the counter )
  • Take the portion of the dough and roll it to the shape of rectangle. 
  • Roll , opposite sides towards the middle of the dough.
  • Flatten it and roll one side of the dough again towards you and press the edges well with your figures.
  • Roll the dough to form baguettes .
  • Place the baguettes over the flour dusted cloth . Cover the Baguettes with a wet muslin cloth and keep it in a warm place . Allow it to raise for another hour .
  •  Once it is raised ,  Preheat the oven at 400F.
  •  Brush the baguettes with water and make slashes , dust some flour over it .
  • Keep a bowl of water in a corner of the oven and bake the baguettes at 420F for 25 minutes. ( Baguettes are ready if you hear a hollow sound when they are tapped ) 
  •  cool them completely .

Slovak Paska Bread - Eggless

Paska is an Easter Bread eaten in European countries. It is made with Flour, Sugar , Butter , Eggs , Yeast and Milk . The egg and water mixture is used as Glaze on top of the bread. The bread is made into round loaves and decorated with religious symbols with the bread dough. Slovak Paska Bread was the Suggested for this months Baking Eggless Challenge. Thank you +Gayathri Kumar for the wonderful challenge.


Seriously it was challenging to make this bread without the eggs. First time when i made the bread ,it was super difficult to handle the dough . It was sticky . Still i managed to do the braids. After it was baked , i Couldn't even see a sign of braids in the bread . But the bread was baked well and it tasted really good. So i thought to make the bread again.

Second time it the dough was very easy to handle . I did the braids with no difficulty and the bread turned out perfect .



Ingredients:

All Purpose Flour - 2 Cups + Dusting
Yeast - 2 TSP
Sugar - 2 TBL
Salted Butter - 4 TBLS ( Room Temp)
Yogurt - 1/3 Cup + ( Room Temp)
Milk - 1/3 Cup ( Room Temp)
Milk - For milk wash


Instructions:

- In a large bowl add all the dry ingredients together.
- Mix it well so that all the ingredients are combined. 
- Add the yogurt and mix it . Add milk little by little and mix it till it forms a dough .
- Transfer the dough into the counter . Add the Butter and knead it well it the dough turns out smooth.
- Knead it for 7-10 minutes . If you feel the dough is dry add a little milk/yogurt and knead it.
- If the dough is sticky dust some flour and knead it .
- When the dough is smooth and elastic , Apply some butter over the dough and keep it in a bowl , cover it with a cling wrap and allow it to rise. It could take 1 hour or more depending on the temperature. ( It took 11/2 hrs as it is super cold here).
- Once the dough has doubled . Punch it to release the air.
- Divide the dough into three portions. 
- I used one portion to keep it in the center of the pan .
- Another portion , i braided it , and decorated around the center.
- Third portion , I decorated on top of the first and second portion.
- Cover it with a muslin cloth allow it to rise again.
-Preheat the oven at 350F.
- Brush it with milk and bake it for 20 - 30 minutes.
- Remove it from the pan and allow it cool completely.

Spicy Garlicy Monkey Bread / Pull apart Bread - HBC - 4



This month's Home bakers challenge was Bread. 4 options were given and we had to choose one out of them. These were suggested by  Manjula Kanted from Desi fiesta .thank you Priya and Manjula for the wonderful challenge .i loved baking this bread.

1.Rainbow swirl classic bread.
2.Fresh Strawberry chocolate Stuffed Monkey Bread.
3.Chocolate Marble Asian Bread
Anadama Bread.

I wanted to do Fresh Strawberry Chocolate stuffed Monkey Bread , But there are no takers for it at home . So i decided to make a spiced Garlicy Monkey bread . It was a hit at home . The bread Vanished within minutes . The twist in the bread was i has stuffed the sauted grated garlic  in the bread . .

Though the filling was just a simple sauted garlic but  the bread had an awesome flavor and taste.

When it was baking in the oven the whole house smelled soooo good.



I still wonder who would have named it " Monkey Bread" and why was it name like that ?

Normally monkey bread is a sweet , sticky , gooey pastry served for breakfast. It  is also has so many different names like  monkey puzzle bread, sticky bread, African coffee cake, golden crown, pinch-me cake, pluck-it cake, bubble loaf and monkey brains


Ingredients:

For the Dough:
  • All Purpose Flour 1 and 1/2 cups
  • Active Dry Yeast 1 tsp
  • Salt 1/2 tsp
  • Sugar 1/2 tsp
  • Butter 1 tbsp(soft at room temperature)
  • Warm Milk  1/2 - 3/4 cup
For the Spicy Topping :
  • Dried Parsley Leaves
  • Chili Powder
  • Butter
  • Sauted Grated Garlic
For the stuffing :
  • Garlic - Grated
  • Olive Oil
  • Salt

Instructions:

To Make the dough:

  • In  bowl, add flour, salt, sugar, yeast  and combine them well .
  • Using a dough hook start kneading them by adding warm milk little by little at a time .
  • Once it had formed a dough and add softened butter and combine well.
  • On a lightly floured surface Knead dough for about 7 - 8 minutes .
  • Rest the dough  for an hour in a bowl which is  greased with little oil.
  • Cover it with a wet kitchen towel .


To Make the Filling:
  • Clean the garlic , Grate it and keep it a side .
  • In a pan , heat the olive oil , add the grated garlic  and sprinkle  some salt and saute it till the raw smell of the garlic goes.
  • Rest the mixture till the flavors combine .
That's it . The filling is ready . If you want it to be little bit spicy . When you are sauteing sprinkle some chili flakes.

How to make a Monkey Bread with Filling:
  • Grease and dust a 8" pan , keep it ready .
  • Punch down the air in the risen dough . Divine it into equal sized small balls .
  • Knead each ball , stuff some sauted garlic , seal it properlly , place it in the greaced pan.




  • Then brush the dough with melted butter, sprinkle some chilli powder , Dried Parsley and sauted garlic.
  • Cover the dough with a kitchen towl , allow it to rise for another hour.


  •  


  • Once the dough has risen double.
  • Preheat the oven @350 F .



    • Bake the dough for 25-30 minutes.

    Spicy Garlic Wheat Focaccia Bread



      Spicy Garlic Wheat Focaccia Bread  is similar as the other Spicy Garlic focaccia bread i made previously .The only difference in this is  ofcourse i made it with Wheat flour and i have given Flavor to the bread by adding Dried Thyme . Adding Thyme is fully Optional.


    Ingrediets:

    Wheat Flour - 1 Cup
    APF- 1/2 Cup
    Olive Oil-  3 TBLSP
    Sugar - 1 TSPN
    Salt- 3/4 TSPN
    Warm Milk - 3/4 CUP
    Yeast - 1TSPN
    Dried Thyme - 1 TSPN (optional )

    For Topping :

    Garlic Cloves - 5 to 6 Well chopped
    Dried Chili - 2  well chopped
    Asafetida - 1/4 TSPN
    Salt- 1/2 TSPN
    Olive oil - 4 TBLSP


    Instructions for the Spicy Garlic Topping:

    1. In a pan , heat 4 TBLSP Olive oil.
    2. Once the oil is hot add chopped Garlic , allow it to cook .
    3. Then add Dry red chillie flakes , salt and Asafetida.
    4. Once the Garlic turns brown in color ,Turn off the heat and keep the topping aside.

    Make the topping before making the dough , so that the flavors of garlic , salt and chillie gets infused with the oil.

    Instructions for the Dough:

    1. In big bowl add Wheat Flour ,APF , Sugar , Salt , Yeast , 1 TBLSP Oil and mix with a folk.
    2. Once after combining everything add warm milk and with the use of dough hook start kneading the dough.
    3. Add the other 1 TBLSP olive oil and knead it again for four to five minutes.
    4.Then Place the dough in the counter and knead it  with hands by added last TBLSP of Olive oil  till the dough is soft .
    5. In a 8'' clean Nonstick grease proof pan spread the dough / or make it into balls ( as i did) and allow it to rest for couple of hours ( I rested it for three hours).





    6. Cover the dough with a wet clean cloth ad keep it in a warm place.
    7. Allow the dough to double in size. ( I allowed it to raise for 3 hours)


    Once the dough is raised double in size , using a folk / chopstick /finger , punch in wells in the dough with a equal space . Then pour the flavored oil in each well ( Oil gets absorbed in each hole) Allow it to rest for 10 minutes .(cover with the cloth ). Meanwhile preheat the oven at 350F.



                                   




    After 10 Minutes Put the dough in the preheated oven and baked it for 25 - 30 minutes.




    Transfer it to the wire rack and allow it to cool.



     

    Serve it warm with Olive oil dip

    Spicy Garlic Focaccia Bread


    Who doesn't like Focaccia Bread which Spicy garlic flavored .This is a best Focaccia bread i have ever made and ever tasted. The bread is soft , fluffy ,spongy and infused with spicy garlic flavor . Crust of the bread is brown and has all the flovors in it. Crust was more tasty than the bread :P




    Ingredients :

    APF - 1 1/2 Cup + 2 TBLSP
    Yeast - 1 TSP
    Olive oil - 2 TBLSP
    Sugar- 1 TSP
    Salt - 1/2 TSP
    Warm Milk - 3/4 Cup


    Topping:

    Olive Oil - 4 TBLSP
    Garlic - 5 to 6 cloves ( Chop into small pieces)
    Salt - 1/2 TSP
    Dry Red chillie - 2 (Chop it into flakes)
    Asafetida - 1/4 TSP
                                         
    

    Instructions for the Spicy Garlic Topping:

    1. In a pan , heat 4 TBLSP Olive oil.
    2. Once the oil is hot add chopped Garlic , allow it to cook .
    3. Then add Dry red chillie flakes , salt and Asafetida.
    4. Once the Garlic turns brown in color ,Turn off the heat and keep the topping aside.

    After 10 Minutes Put the dough in the preheated oven and baked it for 25 - 30 minutes.
    Transfer it to the wire rack and allow it to cool.

    I actually didn't have patients because middle of baking the whole house started smelling sooo good with an awesome spicy garlicy smell.

     The whole oil seasoning was absorbed and it was a soft & delicious Focaccia Bread
