Guest Post - Heena Rathore - Veg Coleslaw

  
 Hey Guys ... Its so nice to be back after a week with a guest post. Today's guest is an Exxxxtra Talented lady who maintain 3 blogs ( Yeah you hear it right ... 3 blogs ). The Blog Baking Bud is for all her baked goodies , Cooking Bud is for all her cooking culinary displays and the Reading Bud is for her interest in Reading.Todays guest is none other than our budding blogger +Heena Rathore . Oh My Gosh !!! You guys should go through all her blogs , she keeps updating it every other day . I am so ashamed , having one blog , i blog just once a week for past one month . (Other than being lazy and having so much of food restrictions , i have no clue what to cook ).

 When +Heena Rathore expressed her interest on doing a guest post , i was super thrilled . After drooling over her recipes , i was really interested to accept her request. Guess what when she sent me the guest post, i was so excited to see one of my favorites - COLESLAW . When ever i go to KFC or Captain D's , i never fail to have Coleslaw as my sides . But never thought of trying it my self. Thank you so much for the wonderful recipe +Heena Rathore .

 A big hello to all the Just Not The Cakes readers!

 I'm Heena Rathore Pardeshi and I blog at The Cooking Bud. I am really happy to be writing for sharanya aka +Shey divine . She is a very talented and a professional blogger and her blog Just Not The Cakes was an instant inspiration for me to take blogging seriously. I love her blog and look forward to try a lot of recipes from her space. 

 I was going through Shranaya's blog and came across the Guest-Posts page and immediately sent her a mail asking to do a guest-post for her blog. She was kind enough to accept my request immediately and also quite patient to give me enough time to complete my guest-post.

  For this guest post, I am doing my version of Veg-Coleslaw Sandwich.

              

                  
Coleslaw Sandwiches are such an easy breakfast and snack option that I make them at least once a week. The coleslaw that I make is really easy and needs very less effort. The sharpness of cabbage, the saltiness of mayonnaise and the sweetness of carrots with just a hint of mustard balances the overall taste so beautiful that you'll be left wanting for more.

Whether you are hungry or not these sandwiches are just what you need to give an out-of-the-world experience to your taste buds.

Ingredients:

Cabbage, shredded: 2 Cups
Carrot, grated: 1 Cup
Mayonnaise: 4 Tbsp
Cheese Spread: 2 Tbsp
Classic Yellow Mustard: 1/2 Tsp
Black Pepper Powder: To Taste
White Sandwich Breads: 6 Slices
Butter: To spread on breads (optional)

Method:

    1.   In a mixing bowl put mayonnaise, cheese spread and mustard and mix nicely with until smooth.

     


              

    2.  Add shredded cabbage and grated carrots into the above mixture and mix nicely.

             

    3.  Add black pepper powder and mix again.

             

    4. Take slices of sandwich bread and cut off the edges.

              

    5.   Spread butter nicely on the breads and spread the    prepared coleslaw on them in a thick layer.

           

    6.   Top it with another bread and cut into desired shape   and size.

    7.   Taste best if served cold out-of-the-fridge.


Notes:
·     -   Do not use salt as the saltiness of mayonnaise and cheese spread balances the flavors.
·     -  Vinegar can also be used for adding flavor in coleslaw.
·     -    Cheese slice or grated cheese can also be added to the sandwich.
·     -  White bread can be replaced by whole wheat bread.

Fruit Trifle - A guest post


I am so relieved now , finally after a month I am writing this guest post for +Beulah Arun from Full Scoops . I was actually done with the guest post long back , but couldn't do the editing and the drafting part . Finally got some time time to sit and do the drafting part . Sorry Buelah , I made you wait for so long .

After a heavy meal i would love to have a dessert which i really mild in sweet . These type of fruit trifle are really better as they are lesser in sugar content . The cake was eggless vanilla sponge topped with whipped cream loaded with Strawberries ,Pears and Banana , finally garnished with fresh cream and strawberry .


When +Beulah Arun asked me to do a guest post , i was totally clueless ,what should i make . After further conversation with Beulah , she was like anything is ok but i like your desserts . The bell rang there . Now i know i am going to make a dessert for her .. But the next question which hit my head was what am i going to make ?? After lots of browsing i ended up with this .




If we look all the three fruits which i had used are less in sweet other than banana . But other two fruits will neutralise the sweetness of the cake and fresh cream . If you are looking for a Healthy dessert which is less in sweet these kinds of fruit based desserts are great option to go for .

Guest Post - Methi Chicken from Cutchi Kitchen and giveaway winners


Guest post time !!! .Its been a couple of months since i had a guest post in my space. Here i am a with a talented blogger , who is enthusiastic , active and her recipes makes you drool . She is non- other than +Shazia Wahid .
The recipes on her blog are her families extended collection   of traditional and contemporary cuisines. What i love about shazia's blog is her recipes are crisp and clear . She keeps in mind that her recipes should be simple and easy to follow . Do hop into her space to view all her drool worthy recipes .

so over to  Shazia :

I have made some wonderful foodie friends since entering the world of food blogging and I am happy to have met a fellow food lover friend in Sharanya. When she had asked if I would do a guest post for her - I was happy to do so. We had been following each other’s progress in the kitchen through some common foodie groups after which we became friends.

A little bit about my space in the blogosphere - Cutchi Kitchen - I started this blog as my entire family - not just me are core foodies - we love food - talking about it, making it and tasting it and eventually adapting it and coming up with something else - this little space has become home to a lot of my family’s tried and tested recipes. I wanted a space to collect all my family’s traditional recipes as well as modern ones not just for us - but even for the younger generation - so that these jewels do not get lost over time.

Being a Cutchi Memon - we love non-vegetarian cuisine and favour it if given a choice - so when I started thinking about what recipe to post - I thought about Methi Chicken as its tried and tested recipe which is absolutely easy to make and is made in my kitchen at least once every few weeks. The flavour of methi is one you either love or hate - but in this curry - there is a delicate balance of flavours which works really well with the rich gravy.

So without further ado - here goes the recipe…




Recipe - Methi Chicken (Chicken with Fenugreek Leaves)
Preparation Time: 10 minutes
Cooking Time: 40 minutes Serves 4


Ingredients:


Boneless Chicken - 500 g (cut in cubes)
Fresh Methi Leaves - 1 cup or Dried Kasuri Methi - 1/4 cup
Onions - 3 medium (finely sliced)
Garlic Cloves - 8
Ginger - 1/2 inch piece
Green Chilies - 6
Yogurt/Curd - 1/2 cup
Turmeric Powder - 1/4 teaspoon
Chili Powder - 3/4 to 1 teaspoon
Coriander Powder - 1 teaspoon
Roasted Cumin Powder - 1/2 teaspoon
Garam Masala Powder - 1 teaspoon
Salt to taste
Cashew nuts - 12 (soaked in hot water and ground into a paste)
Oil - 6 tablespoons



Method:

1. Heat oil and fry the sliced onions till golden brown. Remove and cool before grinding the onions with yogurt.


2. Crush the garlic, ginger and green chilies and keep aside. 


3. If you are using fresh methi leaves - wash them and saute in oil - remove and keep aside.


4. In the same oil, saute the garlic-ginger-green chili mixture. Add the turmeric powder, red chili powder and coriander powder. Saute for about a minute. Add the pureed tomato and saute for a couple of minutes.


5. Add the ground onion - yogurt paste and saute for a few minutes till oil begins to leave the side. Now add the chicken pieces and salt to taste - you shouldn't need to add any water as there is enough water in the chicken for cooking it. Cover and let it cook. 


6. Finally add the cashew nut paste, garam masala powder, roasted cumin powder. Mix well and add the fried methi leaves or the dried kasuri methi leaves. Remove from heat and serve hot with parathas or pulao.




Tips and Tricks:

You can use chicken with bone to make this curry and it will take slightly longer to cook. Adjust measurements for the gravy according to the weight of chicken used.

Guest Post at The Big Sweet Tooth


First of all, thank you so much Rafeeda for giving me this opportunity to do a guest post in your space. You are one of the bloggers whom i admire the most .I used to wonder how on earth you get time to post recipes every day. This shows how organized and dedicated you are .Posting recipes twice a week make me think i have done so much of work. Really appreciate your dedication in blogging. I particularly love the way you explain the recipes. They are so simple to understand. Last but not the least , the most important thing I wanted to tell you is know i love your Blog Name -" The big Sweet Tooth " . 

So today I am sharing one of my personal favorite, simple yet delicious Creamy Cauliflower and Broccoli Gratin. Gratin is a French Cuisine which is prepared in a shallow dish. It is baked and then broiled to form a golden crust on top.

Guest Post at Priya's Versatile Recipes

I  am super excited to  do a guest post for +Priya Suresh  who blogs at Priya's Versatile Kitchen  . I am pretty sure everyone knows her . She is such a talented , supportive , versatile and a creative blogger . I could keep taking about her . I should definitely mention fewgood qualities of priya akka ,  She never fails to visit and comment on each post we publish and another thing  is she is always available to help .( I have pinged so many times in FB next second she replies ) . 

Having an event such as " Rendez Vous with A Foodie " is a great thought to encourage newbies like me. Trust me or not all her dates for this were so full and i had to wait for 2 months . All the newbies or anyone interested ,do take this opportunity and mail her ASAP and block the dates .

Now lets come to the guest post by me :

This is a simple and delicious 3 layer party sandwiches. This sandwich is most commonly served in all the kid’s birthday parties, Tea parties and other functions in Sri Lanka. This is the recipe which I follow. Making these sandwiches are little bit time consuming, but it is worth making them.

Guest Post - Foodolicious Pictured - Mutton Chukka

It's already friday  and we all are looking forward for the weekend . I know , like me most of the housewives would be thinking what to cook for next two days . After today's guest post most of them will have a clear idea what to cook this Sunday .  I am  pretty sure what am i going to cook this Sunday ..  Ok without a delay let me tell you'll who is my lovely guest today . It is non other than +Rekha Vengalil  , who blogs at FoodOlicious Pictured . A very talented blogger whom i met through blogosphere and became friend with.

I could keep talking about the lady behind the creative blog . Rekha is such a Talented Blogger ,Creative Recipe Writer , Amazing food stylist and an Awesome Photographer  . Her blog is full of lovely tempting recipes . All her pictures make us get tempted to grab the food from the screen .  she is such a down to earth and a humble person . One good quality to mention about Rekha is , she never fails to comment on other blogger's posts . Last but not the least i got to mention about her recipes , all her recipes are unique in someway .It is so difficult to pin point one single recipe which i like the most from her blog . I Love everything in her blog . Rekha remember i am a big fan of your blog .

Hello to all you beautiful readers,
On one of those blog hopping lazy afternoons I landed on this beautiful blog with some great recipes that I clicked the follow button in a jiffy. It’s been not long that I met Shey, but in this short span of interactions, she comes across as a warm and affable person. Truly blogging has got me connected to some wonderful like-minded people. It’s pleasure to have met you. Thank you Shey for having me over and I enjoyed doing this post for you.
There are many recipes from here that I have bookmarked. A few favorites which come to mind are:

Sri - Lankan Chocolate Cake
Kaha Bath / Fragnant Yellow Rice
 And a little of me, I am from Kerala and settled in Singapore; living with my husband and our daughter who is five and a half now. Apart from being an HR consultant, cooking is something I have always loved to do but it really took off only after I came to Singapore.  The amalgam of cuisines here inspired me big time into the culinary world and when I decided to record all my hits and trials, Foodolicious Pictured was born.  Photography and styling is something I love doing and my blogs give me ample opportunities to pursue that interest as well.


Over to the recipe, I have brought along a famous south Indian recipe “Mutton Chukka”. A spicy and lip smacking number from Chettinad region of Tamil Nadu state in South of India. Chettinad is famous for their use of spices and very aromatic dishes. If you would like to read more of then click here. Chukka mean “Dry’ and thus the meat is cooked along with spices till all the liquid has almost dried up. Please adjust the spices to suit your taste.

                                                       


For Mutton Chukka, you need:
  •   Lamb/mutton – 500 grams
  •  Onion – 1 large, finely sliced
  •  Ginger-garlic paste –2 tablespoons
  •  Tomatoes – 1 large
  •  Curry leaves – 1 sprig
  •  Coriander powder – 2 tablespoons
  •  Chili powder – 3 teaspoons or to taste
  •  Cumin powder – 1/2 teaspoon
  •  Turmeric powder – 3/4 teaspoon
  •  Black pepper powder - 2 teaspoons
  •  Dried red chili - 2
  •   Whole spices
o    Bay leave –1
o    Green cardamom – 2
o    clove – 3
o    Cinnamon – 1 inch stick
o    Cumin seeds – 1/4 teaspoon
  •         Salt to taste
  •        Oil as required
  •         Fresh coriander leave to garnish


How to -
Wash the meat and cut into medium sized pieces.
Marinate the meat with 1/2 teaspoon turmeric powder, 1 tablespoon ginger-garlic paste for about 30 minutes.
In the pressure cooker, put marinated meat with enough water to cover the meat, salt to taste and cook till the mutton is done.
Heat oil in a heavy bottom pan, add all the whole spices, dried chili, curry leaves and sauté till fragrant. Add the onion and cook till soft. Tip the remaining 1 tablespoon on ginger garlic paste, and cook till the raw smell is gone.
Add the coriander powder, chili powder, cumin powder and turmeric powder and cook till the oil start to separate. Add the tomatoes and cook till mushy.
Add the cooked meat and little stock at a time and cook till the liquid has evaporated. Now add little more stock again and continue to cook till the liquid has evaporated. Repeat this process till the stock is all used up ( I used about 2 cups of stock) and cook till the gravy is semi dry.
Now add the pepper powder and stir for a minute. Turn off the heat.
Into a serving dish and garnish with coriander leaves. Serve hot with steamed rice.
