Guest post time !!! .Its been a couple of months since i had a guest post in my space. Here i am a with a talented blogger , who is enthusiastic , active and her recipes makes you drool . She is non- other than +Shazia Wahid .
The recipes on her blog are her families extended collection of traditional and contemporary cuisines. What i love about shazia's blog is her recipes are crisp and clear . I
have made some wonderful foodie friends since entering the world of food
blogging and I am happy to have met a fellow food lover friend in Sharanya.
When she had asked if I would do a guest post for her - I was happy to do so. We
had been following each other’s progress in the kitchen through some common
foodie groups after which we became friends.
A
little bit about my space in the blogosphere - Cutchi Kitchen - I started this
blog as my entire family - not just me are core foodies - we love food -
talking about it, making it and tasting it and eventually adapting it and
coming up with something else - this little space has become home to a lot of
my family’s tried and tested recipes. I wanted a space to collect all my
family’s traditional recipes as well as modern ones not just for us - but even
for the younger generation - so that these jewels do not get lost over time.
Being
a Cutchi Memon - we love non-vegetarian cuisine and favour it if given a choice
- so when I started thinking about what recipe to post - I thought about Methi
Chicken as its tried and tested recipe which is absolutely easy to make and is
made in my kitchen at least once every few weeks. The flavour of methi is one
you either love or hate - but in this curry - there is a delicate balance of
flavours which works really well with the rich gravy.
So
without further ado - here goes the recipe…
Recipe
- Methi Chicken (Chicken with Fenugreek Leaves)
Preparation Time: 10 minutes
Cooking Time: 40 minutes
Serves 4
Ingredients:
Boneless Chicken - 500 g (cut in cubes)
Fresh Methi Leaves - 1 cup or Dried Kasuri Methi
- 1/4 cupOnions - 3 medium (finely sliced)
Garlic Cloves - 8
Ginger - 1/2 inch piece
Green Chilies - 6
Yogurt/Curd - 1/2 cup
Turmeric Powder - 1/4 teaspoon
Chili Powder - 3/4 to 1 teaspoon
Coriander Powder - 1 teaspoon
Roasted Cumin Powder - 1/2 teaspoon
Garam Masala Powder - 1 teaspoon
Salt to taste
Cashew nuts - 12 (soaked in hot water and ground into a paste)
Oil - 6 tablespoons
1. Heat oil and fry the sliced onions till golden brown. Remove and cool before grinding the onions with yogurt.
2. Crush the garlic, ginger and green chilies and keep aside.
3. If you are using fresh methi leaves - wash them and saute in oil - remove and keep aside.
4. In the same oil, saute the garlic-ginger-green chili mixture. Add the turmeric powder, red chili powder and coriander powder. Saute for about a minute. Add the pureed tomato and saute for a couple of minutes.
5. Add the ground onion - yogurt paste and saute for a few minutes till oil begins to leave the side. Now add the chicken pieces and salt to taste - you shouldn't need to add any water as there is enough water in the chicken for cooking it. Cover and let it cook.
6. Finally add the cashew nut paste, garam masala powder, roasted cumin powder. Mix well and add the fried methi leaves or the dried kasuri methi leaves. Remove from heat and serve hot with parathas or pulao.
Tips and Tricks:
You can use chicken with bone to make this curry
and it will take slightly longer to cook. Adjust measurements for the gravy
according to the weight of chicken used.
