Fudgy and Gooey Chocolate Barfi


This chocolate barfi is so delicious tasty . They just melts in the mouth . Barfi is nothing but milk solids with sugar . So when it comes to Chocolate Barfi , it is going to be milk solids , sugar and unsweetened cocoa powder . You can actually come up with any flavor you want . In this recipe i didn't use instant milk solids , so the texture of the barfi is soft , fudgy and gooey .

For this months challenge on Sweet Fantasy Club , +Preeti Garg  had chosen Chocolate Barfi  for indian sweets . Thank you so much if you hadnt suggested chocolate barfi , i would have missed making this delicious gooey Barfi.


The normal chocolate barfi is usually made using mawa/ koya / dry milk powder  . As i didn't have any of these , i tried a version with the ingredients i had and it didn't disappoint me in taste. But the the texture wise it was soft and it has to be refrigerated till you use .

Ingredients :

Fresh Cream - 1/3 Cup
Condensed Milk - 1/3 Cup
Hot Chocolate Mix -  2 TBLSP
Cocoa powder - 2 TSP
Butter - 1 TBLS




Instructions :

- Grease a pan with little butter and keep aside .
- Melt the butter , add fresh cream , condensed milk , chocolate mix and cocoa powder  and mix 
- Cook the ingredients on a medium heat , stirring it continuously without forming lumps , till it leaves the side of the pan.
- Once it starts to get difficult to handle , pour the mixture on the grease proof dish .
- Level it cling wrap it and refrigerate it for one hour .
- Slice it in the shape you want and refrigerate till you use them.

Oven Roasted Pepper Chicken

Sunday afternoons are really special . That's the day we  make good lengthy meal , starting with a good Flavored Biriyani or flavored Rice , a good spicy gravy , side dish and a Salad or Raita .

This how I cook most of the Sundays ( only on Sundays :p).  This oven roasted pepper chicken is a must at our home as we both love the flavor of pepper . 

This dish needs very little chili powder , most of the spiciness is from the pepper.  




 When i plan that i am going to make this chicken for lunch on Sunday , Last thing i do on Saturday night is cut , clean and  put the chicken to marinade. 

To make this pepper chicken , I make a usual pepper chicken semi - gravy , then bake it in the oven to get roasted. The recipe below is for 2 people , If you want to make more double / triple the recipe .


Recipe :                                                                                

To Marinade : ( Over night )

Chicken Quarter - 1 ( Cut it into small pieces with bones ) .
Chili powder - 1 TSP
Coriander Powder - 1/2 TSP ( optional )
Turmeric Powder - 1/4 TSP
Salt - 1/2 TSP
Yogurt - 2 TBLS
Oil - 2 TSP

For the Gravy :

Oil
Cardamom - 2
Cinnamon - 1 , 2" piece
Cloves - 2
Bay Leaf - 1
Onions - 1/2 Cup Sliced / Chopped
Garlic - 1 1/2  TBLS Sliced
Ginger  Paste - 1 TSP ( It can be Omitted too )
Freshly Grounded Pepper powder - 1- 2  TBLS ( Depending on your spiciness )
Tomatoes - 1/4 Cup
Salt
Cilantro Leaves -1/4 Cup Chopped
Water - 1/4 Cup




Instructions :

  • Bring the chicken to room temperature .
  • Using a stone masher , Coarsely mash cardamom , cinnamon and cloves ( Do not  powder it ) . Keep that aside .
  • Now mash the pepper corns . Keep that aside .
  • Heat some oil in the pan , add coarsely mashed spices and the bay leaf . When you can smell the aroma of the spices add the sliced onions and sprinkle some salt.
  • Saute them till they turn golden brown.
  • Then add sliced garlic . Saute it for couple of minutes,
  • Add the ginger paste . Cook till everything sticks to the pan .
  • At this stage add the chopped tomatoes. sprinkle some salt and half the pepper. When the oil oozes out add the marinaded chicken .
  • Close it with the lid , keep the heat at medium .
  • After 10 minutes , you will see water oozes out from chicken . At this stage check the salt and spice level . Add if you want some more . ( Do not add too much as when the chicken gets roasted you might feel too much of salt )
  • When the chicken is fully cooked and the gravy comes to semi gravy stage Sprinkle some Cilantro. Give it a quick mix .
  • Pre heat the oven at 350 F.
  • Now add the chicken and the gravy to the corning dish / bake ware .
  • Bake it for 10-15 minutes till the Gravy reaches the bottom of the dish .
  • Garnish it with cilantro and serve.

Notes :

  •  Do not bake it for too long as it may harden the chicken / or it will be rubbery .
  • Add chili powder / pepper / salt according to your taste.
  • I used bone-in chicken , you can make this with boneless chicken too .

Onion Kachori

Kachori's are deep fried , crispy Indian snack sold in all the chaat shops. For this months challenge on International Food Challenge +Manjula Bharath  from Desi Fiesta had suggested a wide variety of Rajastani Cuisines . I seriously was confused what to choose . Later i opted for the first option which was 1 Sheera and 1 Kachori.

Thank you +Manjula Bharath , +Shobana Sekar and +Saraswathi Tharagaram for giving this opportunity to explore this rajastani Cuisine. We loved these kachori's . First when i made Moong Dal Kachori , i could't take a photograph of it . So i had second chance to make the kachoris again. This time i made onion Kachori's.



Ingredients:

For The Dough:

All Purpose Flour - 2 Cups
Butter - 5 Table Spoon
Salt - 1/2 TSP
Water

For The Stuffing:

Onions- 1 Cup ( Thinly Chopped)
Fennel Seeds - 1 TSP
Chili Powder - 1/2 TSP
Turmeric Powder - 1/4 TSP
Cumin Powder - 1/2 TSP
Coriander Powder - 1/4 TSP
Coriander leaves - 2 TBLS ( Chopped)
Salt - To Taste
Oil- 1 TBLS




Instructions :

To Make The Dough :

- Combine all the ingredients and knead it into a semi- soft dough using enough water.
- Knead the dough for 5-7 minutes.
- Divide the dough into 12 equal portions and keep them covered under a wet muslin cloth.

To Make The Filling:

- Heat oil in a pan . Add fennel seed , cumin seeds and Onions.
- When the onions turn brown add Turmeric powder, chili powder, coriander powder and cumin powder.
- Mix them till they are combined well .
- When the raw smell of the chili powder is gone add the chopped coriander leaves and turn off the heat.
- Allow it to cool down.



                     

How to make the Kachori's :

- Roll out each portion of the dough into circle.
- Place one portion of filling in the center of the circle.
- Seal all the edges and make it into a ball .
- Press it gently with hands and make it flat .
- Using a rolling pin , Roll it out again .
- Repeat this with the remaining dough
- Deep fry the kachori's in hot oil over slow flame . Till both the sides are golden brown.
- This process would take 10 - 15 minutes.
- Serve it warm with Sauce or Chutney
