Apple - Red Raddish Salad with Homemade Dressing.



Weekly Thrice i make it a point that i have some Fresh Salads on my Menu.  This week i had made Veg- Chicken Tikka along with Apple- Red radish Salad . The salad was soo nice , crunchy and refreshing . The ingredients i used were so simple too .. It was just apple and red radish . The dressing for it was also simple .. Lets see the ingredients .


Ingredients:

 Red Apples - Cut into Cubes
 Red Radish - Cut into Circles





Ingredients for Dressings:

Olive Oil
Freshly Squeezed Orange Juice
Freshly squeezed Lime Juice.
Salt
Black Pepper Corns
Cilantro




Instructions:

  • Grind the pepper corns into powder .
  • Mix all the ingredients except cilantro in the blender . Just check whether there is enough salt and pepper.
  • Lastly pour the Dressing on Apple - Red Radish. Mix it with hand.


Note -

 If you do not like the taste of Radish , You can soak it in the dressing for half an hour and lastly add the apples on it .

Bottle Gourd and Fenugreek Leaves Stuffed Chappathi

I am really bad at eating  bottle gourd , because there is a reason behind it . I did my 11th and 12 Th grade in Chennai and i stayed in a hostel . You guys wont believe me , that was not a hostel it was literally a jail , it was soo strict . The main thing there was , we were suppose to eat everything they gave  and  once we are done eating we got to show the plates  . The warden did check the plates whether  are we wasting anything.
The main reason  i hated bottle gourd was once a week we used to get bottle gourd paayasam . Can you believe .. Bottle Gourd Paayasam.  But after i started cooking , i loved all the vegetables , i have tried new varieties of food and  most importantly tried lots of new vegetables too . After growing up in a hostel like that i never waste food and i dont fuss on any vegetables.
These stuffed chappathi's are healthy, delicious and  mainly guilt free . 


The main thing in making the stuffing is a bit tricky . We all know that bottle gourd has water content in it . Once the bottle gourd is cleaned and cut , squeeze the water out of it .  so that the stuffing will not be soggy and it will be easy to handle the chappathi.

Ingredients For the Stuffing:
Bottle Gourd
Fresh Fenugreek Leaves
Turmeric Powder
Chili Powder
Salt
Oil
Mustard Seeds
Urud dal
Fennel Seeds
Onions - Chopped.
Instructions:

1. Clean , Cut and De seed the bottle gourd . Cut it and squeeze the water out of it  .
2. Clean the Fenugreek leaves and cut them .
3. Heat the oil in a pan and add Mustard Seeds allow it to splutter . Then add Urud dhal allow it to brown a little , then add Fennel seeds.
4. Now add the chopped Onions and cook till it turns Golden brown .
5. Once onions are cooked add the bottle gourd , salt , turmeric powder , chili powder , Coriander powder and cook  till the water content in the bottle gourd gets evaporated.
6. Lastly add the fenugreek leaves and cook for couple of minutes and turn off the heat.
7. Allow the stuffing to cool before making the chappathi.



Instruction to make Stuffed Chappathi :

1.  Once the stuffing is cooled down.
2. Take a good amount of chappathi dough , roll it out into a thick disk.
3. Place the stuffing in the middle.
4. Close the edges and make it into a ball.
5. Dust some wheat flour on the counter and on the chappathi ball.
6. Roll it out carefully and slowly make sure the stuffing coming out of the chappathi.
7. Now cook the chappathi on both sides till they are done.


Serve it with a yogurt

Whole Wheat String Hoppers / Idiyaapam


 People who are health concious or on diets do mostly eat Chappathi's . I get bored eating the same chappathi's every other day. I dont want to miss out my favorite foods like Rotti's , Naan's , String Hoppers and Pittu's . So i try to make the foods i love with the wheat flour , which is healthier and i dont compromise in the food i love.

I have made these idiyaapam with store bought Whole Wheat Flour. Before starting i would like to give you a quick tip for a soft idiyaapam's. Steam the Whole Wheat Flour allow it to cool ,  Stain and take the lumps out . Then start making the idiyaapam's

Ingredients :

Whole Wheat Flour - 2 Cup
Salt - Per Taste
 Oil - Little
 Boiling Hot Water - As Required

Instructions:

1. Combine Wheat Flour and Salt then add Hot boiling Water and mix well and perpare the dough.
2. Apply Oil in hands and in the idiyaapam presser.( The dough doesn't stick in the Presser and in hands)
3. Press Idiyaapam's and steam them for couple of minutes.
4. Allow it to cool .

Note - These idiyaapam's take a little longer to cook .

Thayir Oats / Curd Oats

Thayir oats - Thayir in tamil means Yogurt or Curd . Thayir oats is nothing but the Curd rice version in oats . This is good for summer too .. when i decided to do it , i had a second thought that it will not turn up well. But it was good. I just made it with half a cup oats and I was full.


Ingredients :

Old Fashioned Oats - 1/2Cup
Water - 3/4 Cup or lesser
Curd - 1/2 cup
Milk - 1/2 Cup
Salt - to taste
Corriander leaves -  1 TBLSP Chopped
Green Chillie - 1 ChoppedGinger - 1/4 TSPN Chopped


To Temper
Small Onions - 3 to 4 Chopped
Red Chillie - 1
Jeera - 1/2 TSPN
Mustard seeds - 1/2 TSPN
Urud dhal - 1/2 TSPN
Oil- 1 TSPN


Directions:

1. In a non-stick flat pan , Dry roast the oats till it turns light brown.
2. Add the water and salt , give it a stir and allow it to cook.
3. Once the oats is cook . Put the cooked oats in a bowl.
4. Then add yogurt to oats and mix.
5. Add milk and mix
6. Add chopped ginger , chopped green chillie and chopped corriander leaves.
7. Now in another pan heat the oil , add mustard seeds .Once it splutters , add urud dhal . Allow it to turn brown .Now add jeera seeds and fry .Then add Red chillie and chopped onions and cook.

8. Now add the onion mixture to oats mixture an give it a quick mix.
9. Serve it along with a side dish.
