A Quick Corn chip


Do you feel like eating something crunchy in the middle of watching  some TV serials or a movie ????  I have uncounted this so many time . Both of us at home don't prefer snacking so i usually don't buy cookies , chips or any Indian snacks . Even if i buy it occasionally , it will be lying in my counter for weeks .

As a host for  Home bake challenge , for the month of January ,  Corn chips were one among my suggested recipes. The corn chip recipe i suggested was not from scratch  and I had some leftover tortilla lying in my fridge . So there comes my second post for Home Bakers Challenge . Quick and easy Corn chip.

Atlanta was affected so bad due to Winter Storm Pax . Schools , offices ,stores are closed . Walmart was over flowing . Lots of areas didn't have powder and so many accidents . Probably it may come to normal in next couple of days .

The past three days i have been inside the house , watching back to back movies . Made this corn chips to much in middle of the movie. They were delicious. All you need is good quality tortillas , Olive oil , salt and seasoning of your choice.


Ingredients :

Good quality Tortillas - 2
Olive oil
Salt
Pepper
Smoked Paprika

Instructions:

- Pre heat the oven at 350F.
- Cut the tortillas into wedges.
- Arrange the tortillas in a baking tray .
- Brush it with olive oil , sprinkle salt , pepper and paprika.
- Bake it for 6 minutes each sides .
- Remove it from oven and allow it to cool.
- Sprinkle some more salt if required .
- Serve it with preferred dip.

Carrot Rice

 
Carrot Rice is such a simple yet flavorful south Indian dish , which can be made in couple of  minutes . If you have kids at home .This is one of the best dishes to make , they are simple to make , they are not spicy but they are flavorful...
 
 Normally during baby showers we do make 9 types of rices , this is one among them.
 
 

Ingredients:

Carrots - 1 Cup Grated
Basmathi Rice - One cup
Onions- Chopped into small pieces
Ghee
Salt
Green Chili - 2 Chopped really small
Cumin Seeds
Cardamom- 2
Cinnamon - 1 Inch long
Cashews/Peanuts - Optional
Turmeric Powder
Curry Leaves


Instructions :

  • Cook the rice along with Cinnamon Stick , It gives a good flavor to the rice . Allow the rice to cool .
  • Heat the butter , once butter is melted and hot , add cardamom , once you get the flavor add Cumin Seeds , when it turns golden brown add Chopped onions and Curry leaves and  Green Chilies allow that to cook . It just takes a minute to cook .
  • Lastly add the Grated Carrots , Salt and Turmeric Powder . Cook for couple of minutes till the raw smell of turmeric goes.
  • Once the carrots are cooked , Turn of the stove allow it to cool and mix it with the rice.

 
 
Notes -
  • Adding  nuts are optional .
  • Do not over cook the carrots .It will probably takes 2 to 3 minutes for it to cook.
  • I squeezed out little juice from the carrots , i had a fear that rice will turn too sweet .
  • I didn't want to add Mustard seeds and Urud dhal . You can add them before adding Cumin seeds.
