Sri Lankan Iced Coffee


One of the famous drinks for most of the Sri lankans is Iced Coffee. This Coffee is really tasty and refreshing. Any party you go to in Sri lanka this is one of the drinks which will be served. This is not a regular coffee which is made and chilled before drinking. It is made in a different way . There are lots of ingredients added in it. If you are really Calorie conscious stay away from it :P .( Serious)

The other day i got a email from one of my friend , it was about 40 facts about Sri Lankan People . The mail was sooo funny and  i couldn't stop laughing after reading that email. ( I have shared the link above ). But everything on that was true.  The later part of the post was actually about the Sri-Lankan food and snacks served , the pictures on the post really tempted me . I really liked the 18th point on that post. It was , you go to the restaurant you ask for Fanta , Portello , Chocolate Smak instead of Pepsi or Coke. That is 100% true. We all ask for Chocolate Smak and Iced Coffee every time we go out .


 


INGREDIENTS:                                                             This recipe yields : 1 Gallon + 2 Cups

Filter Coffee - 3oz  + 1 1/2 Cup water
Instant Coffee - 1 TSP
Milkmaid - 2 Tins ( 14 oz * 2 )
Sugar -  depends on the sweetness
Cocoa Powder - 2 TSP
Cold Water - 14 Cups
Milk - 2 Cups
Almond Essence - 1/4 TSP
Brandy - 1 Wine Glass ( Optional )

INSTRUCTIONS:

- Add Coffee Powder to 11/2 cups of water and boil it till it reduces to 1 cup.
- Strain it really well . Make sure the coffee granules are strained properly.
- In a big bowl (  you need a very big vessel ) add 14 Cups of water and 2 Cups of Milk.
- Then add Milkmaid to Water and mix well.
- In a small bowl add 2 TBLS hot boiling water , dissolve the instant coffee and cocoa powder.
- Mix this instant coffee mixture to the Milkmaid - Water mixture.
-  Add 1 Cup of Filter Coffee.
- This is the time to check the sweetness . If you want the iced coffee more sweeter add some sugar and mix well.
- Lastly add Almond Essence and Brandy , mix well.
- Pour it in the Bottles and chill it .
- Take the bottle out from the fridge before serving.

Enjoy the Sri Lankan styled Iced Coffee and do comment how it tastes.


Notes :

Adding Brandy is optional .
You can replace Vanilla Essence for Almond Essence.
Make sure you strain the filter coffee really well otherwise you will get the tiny coffee granules  .
Straining 4 - 5 times helps to get a  smooth coffee.

Wellewahum - Coconut stuffed Pancakes

These pancakes are  Simple and very quick to make . If you have sudden guests at home and you don't have anything to offer them to eat , this is the snack you got to make for them . Within 10 -15 minutes you are done.When i was small this is one of the snack i ate , Others were Kawun , Konda Kawun , Ellapa , kokis etc .. the list goes on .
Ingredients for the pancake :
Flour - 1 Cup
Eggs - 1 Large Egg
Milk - 1/2 Cup - 3/4 cup
Turmeric - A pinch
Salt - A pinch
1.Beat the the egg well till its fluffy and light in color .
2.Then add flour , salt & turmeric , beat well.
3.Add milk little by little to the mixture , till the batter pouring consistency. ( dosa batter consistency)
Ingredients for filling:
Coconut - 3/4 Cup
Grated Jaggery ( Kithul) - 1/4 Cup ( can add more or less according to your taste buds)
Salt - A pinch
Pepper - A pinch
Crushed Cloves - 3 to 4
Butter - 1 TBLSP
How to make the filling :
1. In a saucepan add butter .and melt it
2. once the butter is melted and hot , add the crushed cloves.
3. Add Grated jaggery , wait till it melts .stir it constantly.
4. When the jaggery is melted fully add grated coconut , salt and pepper. Mix them well .
5. Once all the ingredients are combined , turn off the heat , allow the filling to cool.
How to make the Pan cake:
1.  Heat the Non -stick Tawa or skillet ,  Pour the batter in the middle of the tawa , and swirl it probably 6-7 inch round. ( like you make dosa )
2. Once you see the side of the pancakes gets removed from the tawa , that's the sign its cooked.
3. Take off the pancakes from the tawa keep it in the plate.
4. Keep the filling in one side of the pancake and roll it. (Do not allow the pancakes to cool before you roll it out ).




Notes:
  • These pancakes should be soft and not crispy.
  •  If you feel that , you are going to smell the eggs in the batter , add some vanilla essence.
  • If you don't have jaggery at home , you can add brown sugar or normal sugar.  
  • Do not allow the pancakes to cool down before you roll it with filling.
  • Thats because once you roll out warm the edge of the pancake will stick to the pancake and it will be easy to handle.  
  • Not necessary to flip it to the other side , you cannot roll our properly and stick the edge tight.
  • Make sure you roll it out tight so that the filling will not fall from sides
  • Pan cakes gets cooked within a 30 - 40 seconds if the batter is not too think.

Spicy Pol sambol


Pol Sambol is similar to coconut chutney. But the only difference in Coconut Chutney is ,  you add water when you grind it . In Pol Sambol you don't add water .  Pol Sambol is made mostly everyday in each house in Sri Lanka . You can eat it with Freshly Baked Bread , String Hoppers ( Idiyaapam , Pittu , Pol Roti , Rice and mostly anything .

It is spicy , juicy and most importantly very very tasty.
Ingredients -
Shreaded Coconut - 1 Cup
Dried Red Chillies -  2-3
Small Red Onions  ( Sinna Vengayam) - 2-3
Lime Juice - 1/2
Salt - To Taste

Instructions -
 1. In a Mixie grind the red chillies into paste.
 2. Add Shreaded Coconut and grind for half a minute.
 3. Now clean the sides of the mixie jar add the small onions and grind for another half ( Do not over grind it ).
 4. Even if the chillie is not mixed properlly with coconut thats ok because you are going to use your hand for mixing  later.
 5. Put the grinded sambol in a bowl , squeeze in some lime juice and add salt to taste.
 6 . Combine everything by  using clean hand . ( It gives more taste ).
Optional :
Heat some oil in a pan, add curry leaves , Chopped onions n some dried shrimps or Maldives fish and toss in the sambol.

Notes - It is more tasty , when you grind it with grinding stone ( Ammikallu / Kulavi )
            You can also add chillie powder for Dried chillies .
            Do not over grind it . It becomes chutney .
            If you dont like raw onions you can avoid it or toss it in the oil and add it to the sambol.
