A Quick Corn chip


Do you feel like eating something crunchy in the middle of watching  some TV serials or a movie ????  I have uncounted this so many time . Both of us at home don't prefer snacking so i usually don't buy cookies , chips or any Indian snacks . Even if i buy it occasionally , it will be lying in my counter for weeks .

As a host for  Home bake challenge , for the month of January ,  Corn chips were one among my suggested recipes. The corn chip recipe i suggested was not from scratch  and I had some leftover tortilla lying in my fridge . So there comes my second post for Home Bakers Challenge . Quick and easy Corn chip.

Atlanta was affected so bad due to Winter Storm Pax . Schools , offices ,stores are closed . Walmart was over flowing . Lots of areas didn't have powder and so many accidents . Probably it may come to normal in next couple of days .

The past three days i have been inside the house , watching back to back movies . Made this corn chips to much in middle of the movie. They were delicious. All you need is good quality tortillas , Olive oil , salt and seasoning of your choice.


Ingredients :

Good quality Tortillas - 2
Olive oil
Salt
Pepper
Smoked Paprika

Instructions:

- Pre heat the oven at 350F.
- Cut the tortillas into wedges.
- Arrange the tortillas in a baking tray .
- Brush it with olive oil , sprinkle salt , pepper and paprika.
- Bake it for 6 minutes each sides .
- Remove it from oven and allow it to cool.
- Sprinkle some more salt if required .
- Serve it with preferred dip.

Faker Pecan ShortBread


I am the host for this month's Home bakers Challenge . The theme i chose was "American Food Holidays" for the month of January. I had suggested 6 interesting baked goodies with the dates. Isn't it interesting to celebrate a day  for what we bake and it is a great way to enjoy the food as wel .

January 6 - National Shortbread day .
January 16 - National Fig Newton day.
January 21 - National Granola Bar day.
January 22 - National Blonde brownie day .
January 23 - National Pie day .
January 29 - National Corn chip day .

As a host i had planned to bake all the recipes i suggested . I was soo busy the whole month baking so many cakes ( Click here to check my cakes ) and was not regular to update my blog as well . But  i will be baking everything as they are in my to-do list .

Now about the suggested recipe Faker Pecan Short bread , i was fascinated when i saw the name of shortbread in Yudhikayumyum's blog . The main reason for choosing this recipe was , as home bakers we will surely have the ingredients in our pantry around the year . 

Though the recipe i suggested was little confusing with gms / ml , i am happy to see few fellow bakers coming up with their recipes. So lets get to my version of the Faker Pecan Short Bread.

Bake Timings : 15 - 20 Minutes
Makes - 7 cookies and 2 small cookies

Ingredients :                                                                                    

For the short bread :
All Purpose Flour - 1/2 Cup
Corn Flour - 3 TBLS
Icing Sugar -  31/2 TBLS 
Butter - 4 TBLS
Pecan  ( chopped ) - 1/4 cup
Vanilla Paste - 1/4 TSP
Milk - 11/2 TBLS ( till you a dough )

For the Chocolate Sauce Decoration :
Semi Sweet chocolate chips - 3 TBLS
Milk - 11/2 TBLS




Instructions :

- Pre - heat the oven at 350 F.
-  Mix all the dry ingredients together .
- Now add Vanilla paste and butter .Mix it with hands as we do for pie crust .
- Once the butter is mixed really well with the flour mixture add the  chopped nuts and milk and mix to form a dough .
- Spread a cling wrap in the counter and place the dough , press it to flatten it . Cover it with another cling wrap and roll it to the thickness you prefer .
- Cut it with a cookie cutter and arrange it in the baking tray .
- Bake it for 15 - 20 minutes .
- Allow it to cool completely , before pouring the chocolate syrup on top on the shortbread.



 For chocolate Syrup :

- In a heat proof microwavable bowl , add milk and chocolate chips and microwave it for 15 seconds . Give it a quick mix and microwave it again for another 15 seconds .
- Allow the chocolate mixture to cool completely  before pouring on top of the short bread.
- When the chocolate mixture is cooled completely , using a spoon , pour the chocolate on top of the shortbread .
- Serve it .
- If you are going to store it , allow the chocolate to set then store the cookies in a air tight box .



These shortbread are buttery , Crunchy with all the pecans in it. They really melt in the mouth .

Eggless Almond Biscottis

This month on Home Bakers Challenge the theme chosen by +Priya Suresh was Biscottis . I had already had posted the Savory version of biscottis .  When i was searching for more apple recipes after my apple picking , I came a cross this eggless version of biscottis which substitutes apple sauce for eggs. Isn't it cool . The taste was fabulous with crunchy almonds in every bite . 

Good thing about this recipe is Apple sauce gives you natural sweetness and you require to add less amount of sugar and the fat content is much lesser than usual, still you will not miss the goodness of biscottis .

INGREDIENTS:

All Purpose Flour - 3/4 Cup
Baking Powder - 1/4 TSP
Salt - 1/4 TSP
Sugar - 3 TBLS (Depending on the sweetness of apples)
Vegetable oil - 1 TBLS
Vanilla Extract -  1/2 TSP
Almonds - 1/3 Cup
Apple - 1/2  to make a puree about 1/4 Cup.  ( You might need more or lesser depending on forming the dough )

INSTRUCTIONS:


  • Pre- heat the oven at 350F.
  • Aline the baking tray with parchment paper .
  • Combine all the dry ingredients together ,except sugar  .
  • Combine Apple sauce , sugar , vanilla extract and oil . Mix till the sugar is dissolved.
  • Now add the apple sauce mixture and almonds to the dry ingredients and combine all with hands.
  • This will make a smooth dough .
  • Shape the dough to the shape of a log , about 3 inches wide and 3/4 inches thickness.
  • Transfer it to a baking tray .
  • Bake it for 25 - 30 minutes till it is firm.
  • Once it is done , take it off the oven and cool it for 15 minutes.
  • Using a knife slice the biscottis cross wise and arrange the biscottis in the baking tray
  • Now decrease the temperature to 300F and place the baking tray in the oven .
  • Bake it for 10 minutes on each side. Once they are done place it on the wire rack and allow it to cool completely .





Note - I had used apple puree / Sauce made at home . You could use store bought apple sauce .
          Depending on the sweetness of the sauce adjust the sugar level for the biscottis .

Savoury Caraway Cheese Biscottis # HBC

For this month challenge on Home Bakers Challenge was Biscottis . Biscottis are twice baked cookies originated from Prato , Italy . These cookies are oblong shaped almond biscuits , made dry and crunchy through the loaf of  dough while still hot and fresh from baking in the oven. Thank you +Priya Suresh  for choosing Biscottis for this months challenge , i would have not tried this at all .

 For this months challenge as usual we were given 4 biscotti recipes and we had to choose one and make them. 4 suggested recipes were :

  • Savoury Caraway Cheddar Biscottis
  • Eggless Oats Chocolate Biscottis
  • American Style Vanilla Biscottis
  • Savory Mediterranean Biscottis
I adopted the Savoury Caraway Cheddar Biscottis recipe and made quite a few changes in it . one was i used mozzarella instead of Cheddar , instead of eggs i used yogurt and for spiciness i added chili flakes and for some flavor i added dried parsley .

It is my first time baking biscottis , though by looks it doesn't look great , but it tasted really good.


INGREDIENTS:

All Purpose Flour - 1 Cup + 2 TBLS
Yogurt - 1/4 Cup +
Cheese - 1 Cup
Baking Powder - 1/2 TSP
Salt - 1/4 TSP
Chili Flakes - 1 TSP
Dried Parsley - 1 TSP
Caraway Seeds - 1/2 TSP
Crushed Pepper Corns - 1/4 TSP

INSTRUCTIONS:


  • Mix all the dry ingredients together in a bowl .
  • To that mixture add the cheese and lastly add the yogurt and form it to a dough.
  • In a lightly floured surface knead the dough couple of times. 
  • Lastly form the dough into log shape .
  • Place it into a parchment lined baking sheet.
  • Bake it at 350F for 20- 25 minutes until the log is firm.
  • Allow it to cool down completely.
  • Now cut them into slices.
  • Arrange them into the baking sheet and bake them for 15 minutes on each side or till they are golden brown.
  • Cool them completely before serving.

Spinach Cheddar Muffins


I should have posted this recipe very long back , because of my broken computer I am just stuck without posting the recipes .. Finally I am back with the iPad . No other way , I got to use it :( .
Last Month's Home Bakers Challenge was chosen by Shama Nagarajan from easy 2 cook recipes . Shama had suggested 6 wonderful recipes , as usual I chose the savory recipe :) . Thanks +Shama Nagarajan  and +Priya Suresh  ( The brain behind creating this group) .



These were the 6 recipes , Shama suggested :
  • Vegetable Muffins
  • Banana Coconut Crumbs
  • Banana Nut Muffins
  • Honey Drizzled Semolina Cake
  • Pumpkin Coffee Cake
  • Spinach Cheddar Muffins






The actual recipe is really mild , so i added some spice to my taste .


RECIPE:
  •  Baking Soda - 1/2 TSP
  •  Baking Powder - 2TSP
  •  Salt - 1/2 TSP
  •  APF - 11/2 Cups
  • Butter - 6 TBSP (Melted)
  • Egg - 1
  • Whole Milk - 1 Cup
  • Fresh Spinach - 1/2 Cup
  • Cheddar Cheese - 1 Cup ( Shredded )
  • Chilli Flakes - 1 TSPN
  • Grounded Fresh Pepper - 1 TSPN




INSTRUCTIONS:
  • Preheat the oven to 350F .
  • Arrange the muffin pan with cupcake liners.
  • Mix all the dry ingredients in a bowl .
  • Stir in the melted butter , egg , milk , spinach , cheese together in a large mixing bowl until everything is blended together .
  • Stir in the flour mixture to form a batter.
  • Spoon about 2 Tablespoons into each muffin cup.
  • Bake it for 30 - 35 minutes until a toothpick inserted into the center of a muffin comes out clean.



These muffins are super fluffy and soft . It tastes good either .
