Eggless Churros with Chocolate Sauce .


When ever i go to the mall near by house , i buy these warm sugar and cinnamon coated Churros  w/ Chocolate Sauce. They are made fresh every time .The shop that sell Churros is always crowded . The whole area smell so good with the flavor of cinnamon and I love the free sample they give .

This was the first time i had made Churros at home .It was really fun making it .  Anything homemade is always fresh and tasty than the store bought . When friends are over to your place , Kids parties , Movie nights this can be a great snack / sweet .



I should definitely thank +Preeti Garg from Simly Tadka for suggesting Churros for this months Challenge on Sweet Fantasy Club.



Ingredients :

For Churros :

All Purpose Flour - 1/2 Cup
Olive oil - 1 TBLS
Water - 1/2 Cup
Salt - A Pinch 
Oil - To fry 
Sugar -  1 TSP + to sprinkle
Cinnamon - to sprinkle  ( Optional , i didn't use them )

For Chocolate Sauce :

Good Quality Chocolate Chips - 1/2 Cup
Cream - 1/3 Cup



Instructions:

To make Churros:
  • In a saucepan , over a medium heat , combine water , flour , sugar , salt and  vegetable oil .
  • Bring the mixture to boil , Using a wooden spoon keep stirring to make sure there is no lumps forming . Remove from heat .
  • Keep stirring til it forms a ball. ( Like we do for eclairs )
  • Put the dough in a piping bag with a star tip .
  • Mean while heat the oil  .
  • Mix sugar and cinnamon in a zip lock bag  and keep aside.
  • When the oil is nice and hot , pipe the dough for about 3 to 4 inches long . 
  • Using a scissor , Cut the piped dough to release to the hot oil .
  • Fry the Churros till they turn golden brown.  Rotate the churros to make sure they are fried evenly .
  • Transfer the churros into paper towels , Drain the excess oil from it .
  • When they are warm , add them into the ziplock bag and give it a quick shake .
  • Put it in a air tight box for later use.
To make the Chocolate Sauce:

  • Boil the heavy cream in a saucepan . Pour it over the chocolate . Allow it to sit for couple of minutes and stir it till the chocolate melts .


Notes:

  • If you feel the dough is too tight for piping add a little water ( probably a teaspoon ) and loosen the dough .( That is what i did ).
  • Do not add too much of water to loosen out the dough because if the dough is too watery Churros will be really oily .
  •  Make sure the dough is cooled down before putting it in the piping bag .
  • I used milk chocolate for the chocolate sauce . You can use any chocolate of your choice.


When i was making them i reserved few churros without adding sugar . I sprinkled some salt , pepper and paprika . Oh yum that was great too . Try the spicy version too .

Onion Kachori

Kachori's are deep fried , crispy Indian snack sold in all the chaat shops. For this months challenge on International Food Challenge +Manjula Bharath  from Desi Fiesta had suggested a wide variety of Rajastani Cuisines . I seriously was confused what to choose . Later i opted for the first option which was 1 Sheera and 1 Kachori.

Thank you +Manjula Bharath , +Shobana Sekar and +Saraswathi Tharagaram for giving this opportunity to explore this rajastani Cuisine. We loved these kachori's . First when i made Moong Dal Kachori , i could't take a photograph of it . So i had second chance to make the kachoris again. This time i made onion Kachori's.



Ingredients:

For The Dough:

All Purpose Flour - 2 Cups
Butter - 5 Table Spoon
Salt - 1/2 TSP
Water

For The Stuffing:

Onions- 1 Cup ( Thinly Chopped)
Fennel Seeds - 1 TSP
Chili Powder - 1/2 TSP
Turmeric Powder - 1/4 TSP
Cumin Powder - 1/2 TSP
Coriander Powder - 1/4 TSP
Coriander leaves - 2 TBLS ( Chopped)
Salt - To Taste
Oil- 1 TBLS




Instructions :

To Make The Dough :

- Combine all the ingredients and knead it into a semi- soft dough using enough water.
- Knead the dough for 5-7 minutes.
- Divide the dough into 12 equal portions and keep them covered under a wet muslin cloth.

To Make The Filling:

- Heat oil in a pan . Add fennel seed , cumin seeds and Onions.
- When the onions turn brown add Turmeric powder, chili powder, coriander powder and cumin powder.
- Mix them till they are combined well .
- When the raw smell of the chili powder is gone add the chopped coriander leaves and turn off the heat.
- Allow it to cool down.



                     

How to make the Kachori's :

- Roll out each portion of the dough into circle.
- Place one portion of filling in the center of the circle.
- Seal all the edges and make it into a ball .
- Press it gently with hands and make it flat .
- Using a rolling pin , Roll it out again .
- Repeat this with the remaining dough
- Deep fry the kachori's in hot oil over slow flame . Till both the sides are golden brown.
- This process would take 10 - 15 minutes.
- Serve it warm with Sauce or Chutney

Chicken Patties

               It is one of the best snack to be served with tea. If it is spicy , crunchy and warm ; the patty keep going to the stomach one by one. You can't even count how much you have eaten. You can have a look at fish patties i made in the above link   .



Ingredients For the Dough :
All Purpose Flour - 2 Cups
Baking Powder - 1/2 TSPN
Butter - 1 Stick = 1/2 cup( Room Tempreture )
Salt- 1/2 TSPN
Sugar - 2 TSPN
Ice Cold Milk - 5- 6 TBLSN
Lime Juice - 1/2 TSPN

Instructions to prepare the the dough :
1. In a large bowl Combine All Purpose Flour , Baking Powder , Salt , Sugar and mix well .
2. Then add the Butter and mix it with the flour mixture .
3. Once the butter in incorporated well with the flour mixture add 5 TBLSP of milk and mix well.
4. If the dough seems to be too hard , add one more TBLSP of milk and mix . If the dough is still hard add another TBLSP of milk , You can actually go up to 6 TBLSP of milk But not more than that.
5. Lastly add the the lime juice and knead well.
6.The dough should not be too soft as soon as the ingredients are added .
7. Once all the ingredients are added knead it well for couple of minutes.
8. The wrap it with cling wrap and rest it aside for an hour .

Once the dough is prepared you can make your own filling .
These are the Ingredients i used For Filling , You can make the filling as you want .

Boiled Potatoes - Mash them
Minced Chicken / Boneless chicken
Salt - Per Taste
Pepper 2 TSPN
Green Chillies (chop them )
Chili Powder 1 TSPN
Coriander Powder
Coriander Leaves
Onions - chopped
Garlic - chopped

 1. Add oil in the pan , saute onions, garlic and chopped green chillies.
2. One the onions turn golden brown add the minced chicken, cook it for five minutes.
3. Then add salt , turmeric powder , pepper powder , chillie powder and Corriander powder.
4. When the chicken is cooked well add the boiled mashed  potatoes and mix them well.
5. Check whether the salt is enough . 
6. Remove from the heat , allow it to cool.
How to make patties:
First of all on the oven , preheat it at 350F and bake it for 20 - 25 minutes ( it depends on the oven too so have a close look from 15th minute onwards )
1. Once the dough is rested for an hour . cut and make it in to balls.
2. Now roll the ball into thin sheet .
3. Cut in into a round (probably with some round lid , that's what i do ).
4. Place the Stuffing in the middle of the circle.
5. Make it into the shape you want . ( I made it into Triangle)
6.Use water to stick the dough..
7.  Egg wash the Patties .
Now You are ready to bake.
Bake it for 20 - 25 minutes .

Spicy Garlic Wheat Focaccia Bread



  Spicy Garlic Wheat Focaccia Bread  is similar as the other Spicy Garlic focaccia bread i made previously .The only difference in this is  ofcourse i made it with Wheat flour and i have given Flavor to the bread by adding Dried Thyme . Adding Thyme is fully Optional.


Ingrediets:

Wheat Flour - 1 Cup
APF- 1/2 Cup
Olive Oil-  3 TBLSP
Sugar - 1 TSPN
Salt- 3/4 TSPN
Warm Milk - 3/4 CUP
Yeast - 1TSPN
Dried Thyme - 1 TSPN (optional )

For Topping :

Garlic Cloves - 5 to 6 Well chopped
Dried Chili - 2  well chopped
Asafetida - 1/4 TSPN
Salt- 1/2 TSPN
Olive oil - 4 TBLSP


Instructions for the Spicy Garlic Topping:

1. In a pan , heat 4 TBLSP Olive oil.
2. Once the oil is hot add chopped Garlic , allow it to cook .
3. Then add Dry red chillie flakes , salt and Asafetida.
4. Once the Garlic turns brown in color ,Turn off the heat and keep the topping aside.

Make the topping before making the dough , so that the flavors of garlic , salt and chillie gets infused with the oil.

Instructions for the Dough:

1. In big bowl add Wheat Flour ,APF , Sugar , Salt , Yeast , 1 TBLSP Oil and mix with a folk.
2. Once after combining everything add warm milk and with the use of dough hook start kneading the dough.
3. Add the other 1 TBLSP olive oil and knead it again for four to five minutes.
4.Then Place the dough in the counter and knead it  with hands by added last TBLSP of Olive oil  till the dough is soft .
5. In a 8'' clean Nonstick grease proof pan spread the dough / or make it into balls ( as i did) and allow it to rest for couple of hours ( I rested it for three hours).





6. Cover the dough with a wet clean cloth ad keep it in a warm place.
7. Allow the dough to double in size. ( I allowed it to raise for 3 hours)


Once the dough is raised double in size , using a folk / chopstick /finger , punch in wells in the dough with a equal space . Then pour the flavored oil in each well ( Oil gets absorbed in each hole) Allow it to rest for 10 minutes .(cover with the cloth ). Meanwhile preheat the oven at 350F.



                               




After 10 Minutes Put the dough in the preheated oven and baked it for 25 - 30 minutes.




Transfer it to the wire rack and allow it to cool.



 

Serve it warm with Olive oil dip

Corn - Mushroom Tarts with White Sauce

Corn- Mushroom Tarts , these are similar to  Sweet Corn Baked Egg Tarts with Spinach , which i made a month ago. The only difference in this , I have made the stuffing with white sauce and it has no eggs in it. It is easy and simple to make . I don't make the dough every single time , I  make the dough in bulk and store it in the freezer , so when ever i want to make any tarts or pies it is easy for me.  These Tart shells are better in taste than the store bought one's.
 
Ingredients:
Pastry Sheet / Dough - Recipe
White sauce
 Button Mushrooms - 1/2 Cup sliced
 Sweet Corn - 1/2 Stick
 Pepper Powder - 1/4 TSPN
 Chillies Flakes- 1/4 TSPN  (optional ) or you can use hot sauce
 Salt - As needed
 Cheese – Hand full
Instructions:
      1. Preheat the oven . Prepare the Tart Base in the muffin pan.
      2. Put in corns , chopped mushrooms and sprinkle little Chillie Flakes / Hot sauce in it .
      3. Then pour white sauce in each tart.

White Sauce :
             Ingredients
                      Butter - 2 TBLSP
                      Salt - as needed
                      APF -  1/ 4 Cup
                      Milk -  1/2 Cup
                      Water - 1/2 Cup
 
  Instructions:
                 1. First in a bowl add APF , Water , salt and pepper powder and mix 
                     till it does not have Lumps in it.
                 2. In a pan melt the butter and add the milk and cook.
                 3. When the milk comes to the boiling point, add the APF and water 
                     mixture into it and keep stirring till it becomes thick.
 
   4. Lastly sprinkle handful of cheese on top of it.
   5. Bake the Tarts in the preheated oven and bake it for 20 - 25 minutes.
 

Notes -  Thickness of whitesauce depends on how thick you want .
             Adding Chillie flakes is optional. I wanted the tarts to be spicy.
