Fudgy and Gooey Chocolate Barfi


This chocolate barfi is so delicious tasty . They just melts in the mouth . Barfi is nothing but milk solids with sugar . So when it comes to Chocolate Barfi , it is going to be milk solids , sugar and unsweetened cocoa powder . You can actually come up with any flavor you want . In this recipe i didn't use instant milk solids , so the texture of the barfi is soft , fudgy and gooey .

For this months challenge on Sweet Fantasy Club , +Preeti Garg  had chosen Chocolate Barfi  for indian sweets . Thank you so much if you hadnt suggested chocolate barfi , i would have missed making this delicious gooey Barfi.


The normal chocolate barfi is usually made using mawa/ koya / dry milk powder  . As i didn't have any of these , i tried a version with the ingredients i had and it didn't disappoint me in taste. But the the texture wise it was soft and it has to be refrigerated till you use .

Ingredients :

Fresh Cream - 1/3 Cup
Condensed Milk - 1/3 Cup
Hot Chocolate Mix -  2 TBLSP
Cocoa powder - 2 TSP
Butter - 1 TBLS




Instructions :

- Grease a pan with little butter and keep aside .
- Melt the butter , add fresh cream , condensed milk , chocolate mix and cocoa powder  and mix 
- Cook the ingredients on a medium heat , stirring it continuously without forming lumps , till it leaves the side of the pan.
- Once it starts to get difficult to handle , pour the mixture on the grease proof dish .
- Level it cling wrap it and refrigerate it for one hour .
- Slice it in the shape you want and refrigerate till you use them.

Sesame Seed Balls / Ellu Urundai / Til Ke Laddu


Sesame seed balls are an Indian sweet which is  healthy , Nutritious and definitely Delicious  . These Laddu's are Lord Ganesha's Favorite snack  . They are favorite of my family and friends too . 

Our Ancestors had some reason behind everything they did . In my culture , when a girl child 
attend puberty , these kinds of sweets are given her to eat . ( i was given raw eggs with gingerly oil , Urud dal kali , Sesame seed laddu's , dates )  Even now , this culture is followed . The reason behind following this is to strengthen the body and to keep you fit during Menstrual cycles and pregnancies .

 Fine lets get to the post .


+Preeti Garg from simply tadka had suggested Til Ke Laddu for this months challenge on Sweet Fantasy Club . Thank you for the recipe +Preeti Garg . This was the first time i had prepared this sweet and it turned out fantastic . 


 I  used vellam  / Sugar cane Jaggery  , Sesame seeds , Cashew Nuts , Fresh Coconut Flakes and Ghee  

Normally palm jaggery is used for these kinds of sweets as i didn't have one at home i used other jaggery

 Now about the health / nutritional benefits of Palm Jaggery : High in B complex , Rich in Calcium & Iron , Cleansing agent for the body , helps in digestive problems , good for dry cough , normal cold , asthma , increases the hemoglobin level ,  purify blood , regulate liver functions ( Click here for more details  ) .


Ingredients -

Jaggery  (powdered )- 1/3 Cup
Sesame Seeds - 1/3 Cup
Cashew Nuts - 1/3 Cup
Coconut Flakes - 1/3 Cup
Ghee -  2-3 TBLS
Cardamom powder - 1/2 TSP

Instructions:
  • Dry  Roast Sesame seeds , Cashew Nuts , Coconut Flakes separately . 
  • Once they are golden brown , keep off the heat , allow them to cool down completely . 
  • Coarsely Grind them separately and keep aside .
  • Heat the non stick pan in a medium heat , Add the powdered jaggery .
  • When the jaggery starts to melt ,  add ghee . Mix it thoroughly . 
  • Keep off the heat . Add all the grounded powders and  cardamom powder and mix .
  • When the mixture is warm , prepare them to small balls .
  • Put them in a airtight box and store.



Note :
  • Make the balls when the mixture is warm .
  • If the mixture has cooled down , warm it up a little bit and make the laddu's.
  • Still if you are not able to make laddu add some warm ghee .

Chum Chum - A Bengali Sweet

Chum Chum is a traditional Bengali sweet. It is a variation of  Rasgulla . Once the Rasgulla's are made they are cut in center , filled with Mawa and Nuts , garnished with Nuts on top . According to me Rasgulla's are more sweeter than Chum Chum . The stuffing in the Chum Chum equalizes the sweetness  in it.


Chum Chum was chosen under traditional sweets for this month's Challenge on Sweet Fantasy Club  . I really loved making everything from scratch . It was a perfect Dessert.



Instructions:

- Knead the Paneer for 8-10 minutes.At this stage you will feel the oil from paneer .
- Make equal size balls and keep aside.
- To make sugar syrup , add sugar and water in a heavy bottom pan. Cook it on high and allow the sugar to dissolve completely.
- When it is done , Add the Paneer balls in the sugar syrup , close it with a lid and cook it for another  10-15 minutes.
- At this stage you will notice the Paneer balls are double in size. Remove the lid , Cook it in the low flame for another 2 minutes and remove it from heat.
- Take the Chum Chum from sugar syrup and place it in a plate , allow it to cool down completely.
- Cut the Chum Chum in center and fill it with Milkmaid / Nuts / Mawa / Coconut Flakes .
- Garnish it with preferred Nuts on top and serve chilled.

Notes :

- You could use store bought Canned Rasgulla's cut it in middle and fill it with Mawa/ Nuts /Condense milk for quick Chum chum .
- But making from scratch is more tasty than Canned Rasgulla's
- I used Roasted Hazel Nuts for filling and garnishing , you can use any nuts you prefer.

Moongdal Sheera


In my previous post i had mentioned that i chose one Kachori and one Sheera for the challenge in International Food Challenge.The second Dish i chose from Rajastani Platter was Moongdal Sheera .Sheera is nothing but Halwa. It was the first time i had made halwa by myself. That too i never thought we could make a delicious halwa out of moongdal. It was super easy to make . Thank you +Manjula Bharath , +Shobana Sekar and +Saraswathi Tharagaram for the delicious recipe.



Ingredients:

Moongdal - 1/4 Cup
Ghee - 3 TBLS
Sugar - 1/4 Cup
Condensemilk - to the sugar level.
Nuts of your choice.


Instructions:

- Wash the Moongdal and soak it for 2-3 hours.
- Drain the water and grind the dal without water.
- Heat the ghee and add the ground dal and roast in a low flame till it turns brown .
- Keep stirring it , otherwise it tends to stick to the bottom of the pan.
- When it turned brown add the sugar and mix well till the halwa leaves the side of the pan.
- Lastly add the condense milk and mix really well till it leaves ghee.
- Garnish and Serve them warm with nuts of your choice.
