Orange and Strawberry Cold Soup { Old Post New Pics }

I live in a state where Oranges are famous for . Yes Florida !!!! We get Fresh oranges anywhere and everywhere. They are Pulpy , juicy, Sweet , Fresh and Delicious.
I had some Fresh strawberries left which i  picked on a sale .A good deal Though .

Both Oranges and strawberries make a good combo too...

I love oranges and strawberries individually . But had never tried to combine both the fruits .
So for the Hot summer  , here comes the classic Orange and Strawberries Freshly blended Soup / Juice.

Ingredients :
Orange Juice - Freshly Squeezed from 2 Oranges.
 Strawberries - Handful
Sugar - depending on the sweetness of the fruits.
 Yogurt - 2 TBSP ( Optional )
 Mint Leaves -  4 to 5 Leaves

Instructions:

Put it in the blender and give it a good mix
Serve it chill or with ice cubes .

Notes-
  • I don't prefer adding sugar to it , In case if the oranges aren't sweet you can add sugar to your taste .
  • If the juice is thick , you can add some water and dilute it.

Fereni - A Persian Dessert

Fereni is a creamy and delicious Persian dessert which is made using rice flour , milk and rosewater as main ingredients. The Rosewater gives the intense flavor to the dessert and it is normally garnished with Pistachios . The dessert could be served either warm or cold . I personally like to be on a warm side. But Fereni is best when it is served chill .

For this month's challenge on International Food Challenge  , +Savitha Ganesan was the host . She had chosen Persian Cuisine. Persian cuisine is really similar to Indian cooking . They widely use Rice , Turmeric and Saffron . Among  suggested recipes from savitha's end , i chose Fereni which was little easy . Thank you +Saraswathi Tharagaram for the lovely group challenge .

Ingredients for this desserts are easily available . Still you can substitute with the ingredients too as i did.

Ingredients:

Rice Flour - 1 1/2 TBSP
Whole Milk - 1 1/2 Cup
Rose Water - 1 1/4 TBSP
Sugar - 2 TBSP

Cashew and Almonds - For Garnishing

Instructions:

- In a bowl , combine milk , sugar and rice flour . Mix well using a Whisk .
- The mixture should be lump free .
- Place the bowl in the stove on medium heat and keep it whisking to make sure there is no lumps forming.
-  Mixture will thicken in no time , so keep an eye on it.
- When the mixture is getting thicker add the rose water and allow it to get little more thicker.
- The pudding must be jelly like consistency .
- Pour it in the serving bowls . Garnish it with Nuts .
- Serve it warm or cold .

Guest Post - Heena Rathore - Veg Coleslaw

Hey Guys ... Its so nice to be back after a week with a guest post. Today's guest is an Exxxxtra Talented lady who maintain 3 blogs ( Yeah you hear it right ... 3 blogs ). The Blog Baking Bud is for all her baked goodies , Cooking Bud is for all her cooking culinary displays and the Reading Bud is for her interest in Reading.Todays guest is none other than our budding blogger +Heena Rathore . Oh My Gosh !!! You guys should go through all her blogs , she keeps updating it every other day . I am so ashamed , having one blog , i blog just once a week for past one month . (Other than being lazy and having so much of food restrictions , i have no clue what to cook ).

When +Heena Rathore expressed her interest on doing a guest post , i was super thrilled . After drooling over her recipes , i was really interested to accept her request. Guess what when she sent me the guest post, i was so excited to see one of my favorites - COLESLAW . When ever i go to KFC or Captain D's , i never fail to have Coleslaw as my sides . But never thought of trying it my self. Thank you so much for the wonderful recipe +Heena Rathore .
Lets head over to Heena.

A big hello to all the Just Not The Cakes readers!

I'm Heena Rathore Pardeshi and I blog at The Cooking Bud. I am really happy to be writing for sharanya aka +Shey divine . She is a very talented and a professional blogger and her blog Just Not The Cakes was an instant inspiration for me to take blogging seriously. I love her blog and look forward to try a lot of recipes from her space.

I was going through Shranaya's blog and came across the Guest-Posts page and immediately sent her a mail asking to do a guest-post for her blog. She was kind enough to accept my request immediately and also quite patient to give me enough time to complete my guest-post.

For this guest post, I am doing my version of Veg-Coleslaw Sandwich.

Coleslaw Sandwiches are such an easy breakfast and snack option that I make them at least once a week. The coleslaw that I make is really easy and needs very less effort. The sharpness of cabbage, the saltiness of mayonnaise and the sweetness of carrots with just a hint of mustard balances the overall taste so beautiful that you'll be left wanting for more.

Whether you are hungry or not these sandwiches are just what you need to give an out-of-the-world experience to your taste buds.

Ingredients:

Cabbage, shredded: 2 Cups
Carrot, grated: 1 Cup
Mayonnaise: 4 Tbsp
Cheese Spread: 2 Tbsp
Classic Yellow Mustard: 1/2 Tsp
Black Pepper Powder: To Taste
White Sandwich Breads: 6 Slices
Butter: To spread on breads (optional)

Method:

    1.   In a mixing bowl put mayonnaise, cheese spread and mustard and mix nicely with until smooth.

    2.  Add shredded cabbage and grated carrots into the above mixture and mix nicely.

    3.  Add black pepper powder and mix again.

    4. Take slices of sandwich bread and cut off the edges.

    5.   Spread butter nicely on the breads and spread the    prepared coleslaw on them in a thick layer.

    6.   Top it with another bread and cut into desired shape   and size.

    7.   Taste best if served cold out-of-the-fridge.

Notes:
·     -   Do not use salt as the saltiness of mayonnaise and cheese spread balances the flavors.
·     -  Vinegar can also be used for adding flavor in coleslaw.
·     -    Cheese slice or grated cheese can also be added to the sandwich.
·     -  White bread can be replaced by whole wheat bread.

Thank you Sharanya for giving me this opportunity!

Hope you guys enjoyed Heena's Veg Coleslaw . Thank you so much +Heena Rathore for sparing your time to do a guest post on my space . It's my pleasure to have you on my space .

Do visit her blogs Cooking Bud ,Baking Bud and Reading Bud . Do not forget to leave us your comments . Thank You . Stay Tuned ....

Lavender Macarons w/ White Chocolate Buttercream - A Disaster

Looking at macarons around everyone's blog , i was so tempted to try a small batch . I cannot say that they turned out perfect by shape, but for the first attempt i am happy they look ok and tasted yummy .  They were crispy  , chewy and melts in the mouth kind . The flavor i chose was Lavender with White Chocolate .

We all learn from our mistakes . Now i know the do's and don'ts when i bake the macarons the next time . Though these macarons had nice feet but my main concern was the shape of the macarons , they look like domed meringue cookie. The reason for this would be under folding the batter .( i was little scared as it was the first time ) .

If you guys are planning to bake macarons for the first time do check this step by step illustration by Sara  from A Cup 4 My Cake and Return of the yummy  for your guidance , they are indeed very helpful . I got to mention a special person here whom i think a Macaron Guru who bakes macarons often ... Yup you all guessed it right , it is non other than +Rekha Vengalil from Foodolious Pictured . I literally bugged her after i posted pics of macarons asking for some tips . She was so humble to clear all my doubts about macrons . Thank you +Rekha Vengalil

For this month on Home Bakers Challenge +siriroop nuggehalli from The Brave Cook had suggested so many delicious recipes . Macarons caught my eye from the list which she suggested as i had not tried before .

Recipe:

Almond Meal - 3/4 Cup
Icing Sugar - 1 Cup
2 Large egg whites  -at room temperature  ( Aged  )
Sugar - 1/4 Cup
Lavender Flavoring / essence
Color of your choice

For filling -

White Chocolate - 3 TBSP
Salted Butter - 1/2 cup / 1 stick
Icing Sugar - 2 Cup
Fresh cream / Milk - 3 TBSP

Instructions -

- Bring the Aged egg whites back to room temperature .
- Measure the Almond meal and Icing Sugar . Sieve them thrice together to make sure there is no lumps .
- Whisk the egg whites in a clean , dry  , grease free - water free bowl , till it forms a soft peeks.
- Add the sugar and continue to whisk at lower speed , once sugar is combined well with egg whites , increase the speed to high and continue till it forms stiff peeks. At this stage You will be handling a glossy , shiny egg white . Do not overbeat .
- This is the stage the color and the flavoring to be added . Add little more color than we use for the cakes and icings . Mix it for less than 30 sec .

- MACARRONAGE -

- Now this stage is called as "Macarronage" , which is nothing but folding the dry ingredients with the glossy egg whites . Now slowly add the dry ingredients in three additions.
- Gently fold  the mixture , till you get the ribbon stage . Batter will no longer look airy and fluffy . But do not over fold .
-  If the batter is airy and fluffy , it means it is underfolded and your macarons will be called as Meringue Cookie. ( like mine on the picture )
- If the batter is over folden , You will end up getting a cracked , feetless macarons .
- Even after folding with the dry ingredients , the batter will look creamy and shiny.

- BEFORE BAKING -

- A Line a baking tray with the parchment paper. Do download Macaron template and place it under the parchment paper to get even looking macarons.
- Now fit an No 12 Nozzle in the piping bag , fill all the mixture and pipe it in the parchment paper leaving a gap of 1-2 inches .
- Once the Macarons are piped ,carefully take out the template without messing the piped macarons.
- Tap the baking tray in all sides to make sure there is no peaks or air bubbles .
- Leave the Macarons to dry for 45 minutes to 1 hour . You will notice a layer forming on the top of it and even when you touch it does not stick to your hands . This is a very important stage and do not skip it .
- Now pre heat the oven @350F . Before placing the macarons in the oven , reduce the temperature  to 300F . Bake it for 15 minutes totally . Rotate the baking tray in the halfway through the baking process to get a evenly baked macarons.
- Allow the Macarons to cool in the baking tray for 10 minutes . Then remove it from the tray and place it in the cooling rack , allow it to cool completely.

- FILLING -

Meanwhile Make your own filling . I had Made White Chocolate ButterCream Frosting .

- In a microwave proof bowl heat the white chocolate chips and the fresh cream together for 30 seconds . Stir it again and Keep it for another 30 seconds . Keep it stirring till the chocolate is melted . Bring it to the room temperature before adding it to the buttercream.
- Cream the butter really well , till it is light and fluffy . Add the icing sugar little by little by alternating with white chocolate mixture .
- Adding flavoring like vanilla essence, almond essence , Lavender into the buttercream  is up to you . I left the buttercream with no flavor because my macarons were flavored .

When the Macarons are fully cooled , Pipe the buttercream and sandwich 2 same sized macarons.

The Lesson Learnt from this disaster

-  Draw circles using a bottle cap or smaller cookie cutter and pipe the batter with in the circle. I had pipped big circles .( That was the first mistake  )
- Add little more color than we use for cakes and icing .( I just used the same amount i would use on icing and didn't realise colors on icing would turn little darker if we leave for some time and the same concept on macrons will not work ) .
- Fold the Meringue and dry ingredients well . But do not overfold or underfold. The consistency should be neither too runny or too stiff . When you drop the batter it should be "Thick Ribbon Stage"
- Buy a store bought Almond flour , or use blanched Almonds to grind them . I grounded almonds with the skin and i am not liking the spots on the macarons .
- Do check the oven temperature . Bake the macarons on lower temp as possible .( This is depending apon your oven temp , mine gets hotter really fast . Another website suggested to bake it at 280F for 20 minutes .

Fruit Trifle - A guest post

I am so relieved now , finally after a month I am writing this guest post for +Beulah Arun from Full Scoops . I was actually done with the guest post long back , but couldn't do the editing and the drafting part . Finally got some time time to sit and do the drafting part . Sorry Buelah , I made you wait for so long .

After a heavy meal i would love to have a dessert which i really mild in sweet . These type of fruit trifle are really better as they are lesser in sugar content . The cake was eggless vanilla sponge topped with whipped cream loaded with Strawberries ,Pears and Banana , finally garnished with fresh cream and strawberry .

When +Beulah Arun asked me to do a guest post , i was totally clueless ,what should i make . After further conversation with Beulah , she was like anything is ok but i like your desserts . The bell rang there . Now i know i am going to make a dessert for her .. But the next question which hit my head was what am i going to make ?? After lots of browsing i ended up with this .

If we look all the three fruits which i had used are less in sweet other than banana . But other two fruits will neutralise the sweetness of the cake and fresh cream . If you are looking for a Healthy dessert which is less in sweet these kinds of fruit based desserts are great option to go for .

Hope you guys enjoyed the dessert , to check this simple recipe head over to +Beulah Arun's blog Full Scoops  and don't forget to show us some comment love .
